When the king, deeply impressed by what was served to him, asked the name of the dessert, the cook, short of words, simply said that it was ‘Mysuru Pak.’
After he was done relishing the dessert like nothing he had ever done before, the king asked the cook to open up a shop right in the premises of the palace so that Mysore Pak could be made available to the public as well. In no time, this sweet became extremely famous all around the state.
After the death of the cook, this legacy was taken up by his family. Madappa’s next generation opened up a shop in Mysore and since then, the popularity of this dessert has spread all over India.
Ingredients of this dessert include clarified butter or ghee, gram flour or besan, sugar, and water. For preparing Mysore pak, ghee and besan are mixed together over fire to make a smooth paste. Care is taken while doing so, so that there are no lumps left in the batter. After this, the mixture is smeared on a plate greased with ghee and kept aside.
Once that is done, sugar is added to some water and is boiled by stirring it constantly. Once the syrup comes to a boil, the mixture of ghee and besan is added to it. This mixture is continuously stirred and heated for about 10-15 minutes. After it is done, the mixture is spooned into a large plate, leveled with a spatula, and left to cool down at room temperature. The moment it cools down and is set, it is cut into rectangular or square pieces.
