Litchi Muffins

This easy-to-make recipe will also be your best answer to sudden guest visits. Healthy and nutritious, litchi muffins will make you feel proud of your culinary skills.

 

Ingredients:

Whole wheat flour - 3/4 cup
Unbleached flour - 3/4 cup
Sugar - 1/2 cup
Baking soda - 1/2 tsp
Cinnamon - 1/4 tsp
Nutmeg - 1/4 tsp
Low-fat buttermilk - 1 cup
Fat-free egg substitute - 1/4 cup
Litchi jam or puree - 3 Tbsp
Chopped fresh Litchis - 1/3 cup

 

Preparation:

1. Mix the flours, nutmeg, baking soda, and cinnamon in a bowl
2. Combine litchi spread, sugar, buttermilk, and egg substitute in a separate bowl
3. Combine the liquid mixture well with the dry mixture
4. Add chopped litchis to the mixture
5. Pour the batter in muffin cups and bake for 20 to 25 minutes at 350 F
6. Your homemade litchi muffin is ready
