Our love for fried food runs a close second to our love for sweets. This is probably why sweet shops have a section where they fry snacks like pakoda, samosa, and kachori all day round. Of all the deep fried snacks available, kachori is easily one of the most popular and most loved all across India. It is also one the most famous delicacies of the country known around the globe.
Made by frying a flattened round ball of flour stuffed with moong dal and urad dal with a plethora of spices mixed in, this is a spicy mix of crunch and softness in the same bite.
The history of most Indian cuisines and dishes is not only complex but also very doubtful, as there aren’t many corroborations of their origins. So, the origins of this delicious fried snack is also a topic of debate. Some believe that it originated from Uttar Pradesh, while many others believe that it has its origins in the princely state of Rajasthan.
Over the years, since the invention of the kachori, there have been a lot of delicious experimentations, which in turn have given birth to many different varieties of this historic dish. However, it is believed that the majority of the experimentation started during or after the regime of Prithvi Raj Chauhan.
Two of the most famous kinds of kachori have originated in Rajasthan. The first called ‘pyaaj kachori’ is stuffed with onions and potatoes instead of dals. The cities of Jaipur and Kota are famous for their pyaaj ki kachori. This is a larger version of the dal kachori. In fact, no social meet is complete in Kota without feasting on its famous pyaaj ki kachori which is served with tea. The second is the famous Jodhpuri ‘mawa kachori’. Unlike the various other savoury variations of this yummy dish, mawa kachori is a sweet made with flour with a sweet filling of milk solids which is then dipped into a sugary syrup. This is a popular sweet served at weddings and other such social gatherings. The credit for this delightful sweet delicacy lies with the Late Rawat mal ji Deora, who is said to have invented the well-loved mawa kachori.
There are places in Rajasthan like the Nasirabad region in Ajmer where huge flat kachori known as kachora are very popular amongst kachori lovers and foodies. They also come in two varieties i.e, pyaaj kachora and dal kachora. While the pyaaj kachora is eaten the same day, the dal variety can be stored for upto a month. This kachora is ideal for packing as a snack when one is travelling.
While these snacks can be made at home, they are still more of a marketplace snack. There is nothing more enjoyable than putting away your shopping bags and munching on a kachori with mint and coriander chutney by the roadside while you wait for your tea to arrive.
In many places, kachori is still eaten for breakfast. You can see lines and lines of people queueing up to buy this classical Indian breakfast of deep fried goodness before they start their day. In some places like Jaipur, kachori is also served with thin kadi -- a curry made with chickpea flour. There is a certain technique involved in eating kachori with kadi. You take a kachori, punch a hole in the centre and pour the kadi in the middle till it soaks the kachori. Next, you tear away at the kachori and dip it in the kadi and eat it.
In hindi heart land kachori is often savoured with aalo sabzi (potato curry), whereas in other regions it served with sweet tamarind chutney or spicy mint chutney.
Until about half a century ago, as LPG connections were not very accessible and people relied mostly on kerosene and firewood, so the conventional breakfast that we know today was rarely ever made at home. Due to this, kachori and puri were what nourished generations of indians.
Gone are the days, when kachori had to be consumed right after cooking like puri. Now we have many variants that can be stored for upto a month or sometimes even more.
