The cities of Jaipur and Kota are famous for their pyaaj ki kachori. This is a larger version of the dal kachori. In fact, no social meet is complete in Kota without feasting on its famous pyaaj ki kachori which is served with tea. The second is the famous Jodhpuri ‘mawa kachori’. Unlike the various other savoury variations of this yummy dish, mawa kachori is a sweet made with flour with a sweet filling of milk solids which is then dipped into a sugary syrup. This is a popular sweet served at weddings and other such social gatherings. The credit for this delightful sweet delicacy lies with the Late Rawat mal ji Deora, who is said to have invented the well-loved mawa kachori.
There are places in Rajasthan like the Nasirabad region in Ajmer where huge flat kachori known as kachora are very popular amongst kachori lovers and foodies. They also come in two varieties i.e, pyaaj kachora and dal kachora. While the pyaaj kachora is eaten the same day, the dal variety can be stored for upto a month. This kachora is ideal for packing as a snack when one is travelling.
While these snacks can be made at home, they are still more of a marketplace snack. There is nothing more enjoyable than putting away your shopping bags and munching on a kachori with mint and coriander chutney by the roadside while you wait for your tea to arrive.

In hindi heart land kachori is often savoured with aalo sabzi (potato curry), whereas in other regions it served with sweet tamarind chutney or spicy mint chutney.
Until about half a century ago, as LPG connections were not very accessible and people relied mostly on kerosene and firewood, so the conventional breakfast that we know today was rarely ever made at home. Due to this, kachori and puri were what nourished generations of indians.
