The botanical name for cashew-nut tree is Anacardium Occidentale and interestingly it belongs to the same family as mango and pistachio. Cashew seed and cashew apple come from a tropical evergreen plant – native to northeastern Brazil. This wholesome nut is majorly produced in Nigeria, India, Vietnam, and the Ivory Coast. The cashew tree is said to have been brought to India by the Portuguese sailors in about 1560. However, it was only in 1920’s that it started getting popular.
What makes this nut stand out is the fact that it is actually a seed, not a nut. Unlike all the other fruits that hide its seed inside the flesh, cashew apple lets its seed – cashew – hang from its bottom. This rather delicious seed is encased within a hard two-layered shell. The shell has to go through a vigorous shelling process – boiling and roasting – before the kidney-shaped nut comes out to be consumed by its fans all over.
Cashews aka kaju are consumed all around the world in a variety of ways. They come in different varieties depending on their kernel grade – W-210 to W-240 (210-240 kernels per lb). Vegans have gone as far as processing animal-product-free butter and cheese out of this super versatile nut. Or should we say, seed? And we Indians need no introduction to this favourite of all. It has a permanent place in every household in India. And why not? After all, we have to be ready to make everyone’s most-favoured korma or other kaju gravy delicacy, kaju shake, or your guests most-prized roasted, lightly salted cashews. And how can we not drool even at the slightest mention of the king of mithai – the super heavenly kaju katli or kaju katri – exclusively made of the best of these nuts out there. This nutritious nut is packed with as much flavour as goodness – and has seen delicious transformation from sweets, savouries such as creamy gravies to even beverages such as feni. No wonder, India’s love affair for cashews is a never-ending one. It is in fact the third-highest producer of cashews -- with a whopping 753 thousand tonnes in 2013, according to the Food and Agriculture Organisation.
Cashew nuts are also used in many other cuisines such as Thai, Chinese, Brazilian, African, and more. In Brazil and the Caribbean, cashew apples are considered as rich delicacies. Cashew is one small goodie that has the power of making big changes even in the most ordinary preparations. Chop them and add them to your bowl of cereal, add them chopped or whole to your stir-fried vegetables to make them healthier, or decorate them over your ice creams and other puddings. All these, besides the fact that they can be enjoyed just as they are -- salted and roasted & salted.
Also used to give a rich and more delicious appeal to both traditional and contemporary desserts, cashew is loaded with many health benefits.
