Alphonso Mango With A French Connection

Surprise your guests with this easy-to-make mango dessert recipe during the summer months. Enhance the royal taste of Alphonso mango with this simple recipe and make everyone praise your culinary skills.

 

Ingredients 

For the crust:

  • Flour - 1 cup
  • Sugar - 1/3 cup
  • Salt - 1/8 teaspoon
  • Unsalted, cold butter - 1/2 cup

 

For the filling:

  • Alphonso mango - 3 (cut into pieces)
  • Egg yolk - 3 
  • Sugar - 1/4 cup 
  • Flour - 2 tablespoon 
  • Cornstarch - 2 tablespoons 
  • Whole milk - 1 1/4 cup 
  • Vanilla bean - 1/2 (split lengthwise)

 

Preparation

The crust:

1. Beat flour, sugar, and salt into a mixture
2. Add cold butter and pulse until the mix is in clumps
3. Place the dough on a non-stick tart pan
4. Use your fingers to form an even base and sides of the crust
5. Prick the bottom of the crust with a fork
6. Cover the pan and freeze it for 15 minutes
7. Preheat the oven to 425° F
8. Place the tart pan on a baking sheet
9. Bake for 15 minutes until it is golden brown
10. Remove the crust and allow it to cool 

 

The filling:

1. Combine egg yolks, flour, cornstarch, and sugar in a bowl
2. Whisk the mixture thoroughly
3. Pour milk into a saucepan
4. Add scraped vanilla bean to the milk
5. When the milk begins to foam, remove the vanilla bean
6. Add the milk to the mixture
6. Whisk constantly to avoid curdling
7. Boil the new mixture until it thickens
8. Remove from heat and let it cool

 

For the final treat:

1. Pour the mixture into tart shells
2. Put Alphonso pieces on top
3. Decorate with mint leaves
