Asafoetida is the dried resin exuded from the roots of Ferula herb. The species is native to Iranian deserts, Afghanistan, and India. As the name suggests, asafoetida has a fetid smell but produces a smooth flavour when cooked. It is also known as food of the gods, stinking gum, and devil’s dung.
